Pork Fat-Leaf

Pork leaf fat is the cleanest, healthiest fat you can find.  It is creamy white in color, has a very mild pork flavor and is taken from the fat surrounding the organs.  Leaf fat can be rendered into leaf lard.  Leaf lard is a favorite of bakers, who use it to create crispy, flaky pie crusts and pastries.
